Cheesy Garlic Biscuits

Ingredients:
  • 2 C Bisquick Mix
  • 1/2 C shredded Cheddar cheese
  • 2/3 C milk
  • 2 tbsp butter/margarine, melted
  • 1/8 tsp garlic powder
Directions:

  1. Heat oven to 350°.  In a medium bowl, stir Bisquick mix, cheese, and milk until soft dough forms.  On ungreased cookie sheet, drop dough by spoonfuls. 
  2. Bake 8-10 minutes or until golden brown.  In a small bowl, mix butter and garlic powder.  Brush over warm biscuits.  Serve warm.

Easy (Mostly Homemade) Lasagna

 Ingredients:
  • 1 pound lean ground beef

  • 1 onion, chopped

  • 1 (4.5 ounce) can mushrooms, drained (optional)

  • 1 (28 ounce) jar spaghetti sauce

  • 1 (16 ounce) package cottage cheese

  • 1 pint part-skim ricotta cheese

  • 1/4 cup grated Parmesan cheese

  • 2 eggs

  • 1 (16 ounce) package lasagna noodles

  • 8 ounces shredded mozzarella cheese


  • Directions:
    1. In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
    2. In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
    3. Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
    4. Bake in a preheated 350 degree F (175 degree C) oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

    Playboy Potatoes

     Ingredients:
    • 6-8 potatoes, peeled and cut
    • one stick of butter
    • 1/4 lb Velveeta cheese, cubed
    • 8 oz sour cream
    • 3-4 oz milk (give or take)
    • one package Italian dressing mix
    Procedures:
    1. Preheat oven to 375°.
    2. Boil potatoes until tender
    3. Drain and put in casserole dish.
    4. On the side, mix sour cream and Italian dressing mix.  Add milk as needed to thin it out.
    5. Pour dressing over potatoes.
    6. Slice butter into pats and spread evenly over potatoes.
    7. Do the same with the cheese.
    8. Bake uncovered for about 20 minutes, or until cheese is melted.

      French Toast Casserole

      Ingredients:
    1. 5 cups bread cubes

    2. 4 eggs

    3. 1 1/2 cups milk

    4. 1/4 cup white sugar, divided

    5. 1/4 teaspoon salt

    6. 1 teaspoon vanilla extract

    7. 1 tablespoon margarine, softened

    8. 1 teaspoon ground cinnamon


    9. Procedures:
      1. Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8x8 inch baking pan.
      2. Line bottom of pan with bread cubes. In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla. pour egg mixture over bread. Dot with margarine; let stand for 10 minutes.
      3. Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top. Bake in preheated oven about 45 to 50 minutes, until top is golden.
      Variations:
      • Melt 1/4 cup butter in bottom of the pan 1st. Add 1/3 cup Bisquick to the egg/milk mixture. Used homemade white bread (no crust) and mix it into the egg mixture. Then, pour the mixture over the melted butter. Baked at 400 for 20-25 minutes. Serve it topped w/ syrup and homemade sweetened whipped cream.
      • Deleted the margarine, added 1 1/2 cups more bread, 1/4 c brown sugar, 3 oz cream cheese and 1/4 c pancake syrup. Also, doubled the cinnamon and added about 1 t nutmeg. Mix the cream cheese with the eggs, one at a time. Add in the rest of the ingredients EXCEPT the bread & mix well. Then stir in the bread and pour the mixture into a prepared 9X15 pan and let sit for about 15 minutes. (I used white sandwich bread, lightly toasted. If you're using a hard, dry bread, overnight would be best.) Bake at 350 for about 20 minutes. Additionally, I've made this with cinnamon raisin bread. Ooohh, YUM!

      Sopapilla Cheesecake



      Ingredients:
      • 2 cans of crescent rolls
      • 2 packages of cream cheese
      • 1 C sugar
      • 1 tsp vanilla
      • 1 stick of butter, melted
      • 1 C cinnamon/sugar mixture
      Procedures:
      1. Preheat oven to 350°.  Then, line a 13x9 casserole dish with one can of the crescent rolls.
      2. On the side, mix cream cheese, sugar, and vanilla.  Spread over crescents.
      3. Top with second can of crescent rolls.
      4. Pour butter over crescents.
      5. Top with the cinnamon/sugar mixture. 
      6. Bake for thirty minutes.
      7. Enjoy!

      Taco Soup


      1 lb ground beef
      2 cans Ranch Style Beans
      1 can whole kernel corn
      1 can Rotel
      1 can black beans
      1 large can of crushed tomatoes
      1 packet of taco seasoning
      1 packet of Ranch powder

      Stove top:
      Brown ground meat and season to taste.  Stir in all other ingredients.  Heat to boiling, then turn to low, cover, and let simmer.

      Crock pot:
      Brown ground meat and season to taste.  Stir in all other ingredients.  Cook on low all day.

      Serving suggestions:
      -Serve with tortilla chips
      -mix in sour cream, shredded cheese, taco sauce

      Chicken and Dumplings

      Begin with raw chicken breast tenderloins, and a cup of chopped onion. Cover with chicken broth and one can of cream of chicken soup. Cook for 6 hrs. An hour before serving, take a can of biscuit dough and pinch off pieces like a half dollar sized and slightly mash flat. Add to pot. An hour later, it's ready! So good and so easy.  You can always add mixed veggies to make it more of a pot pie. Up to you!

      Pot Roast and Vegetables

      The ingredients:


      First, chop all the veggies,



      then make a circle in the pan with them.

      
      Then I place my roast in the center of them. Pierce the roast so the flavors soak through. Then add a little oil on top (canola, veg., whatever) Then I add salt, pepper, Tony's, garlic powder or garlic salt, chopped garlic on top.

      Add a little bit of water to the pan.


      Cover with foil, and bake at 350 degrees for a couple of hours and then move it to the crock pot to get super soft.

      Pork Chops Supreme

      We are loving our new calendar system for meal planning (or at least, I am!).  Tonight's menu: Pork Chops Supreme with sweet peas and steamed broccoli and carrots.  Yum...It's in the crock pot now, and it is smelling great!
       
      Want to make it, too?  Here's what you will need.
       
      A few potatoes, peeled and cut, half an onion, diced, four boneless chops, a can of cream of mushroom soup, and seasoning of your choice...of course, we use Tony's!
       
       
      First toss in the potatoes and the onions.
       
       
      Then line the chops in a single layer on top of them.
       
       
      Top with the soup!
       
       
       
      So easy!  Just cook on low for 7-8 hours, or on high for 4-5.  Now, sit back, relax, and...oh, wait....who am I kidding?!  Now your hands are free to chase your preschoolers around all day :)
       

      Finished product!  Mmmmmmm :)

      I don't recommend stirring at all throughout the day because, as you can see, the chops are just falling apart.  Enjoy!
       
       
      Printable Version:
      1 onion, sliced
      3 potatoes, peeled and cut

      Put onions and potatoes in bottom of crock pot. Top with chops, salt and pepper, spoon soup over chops. Cook on low for 8 hrs. or on high for 4-5 hours.

      Swiss Chicken Casserole

      6 chicken breasts, boneless and skinless
      6 slices Swiss cheese
      1 can cream of mushroom soup
      1/4 cup milk
      2 cups stuffing mix
      1/2 cup butter or margarine, melted

      Lightly grease crockpot or spray with cooking spray. Place chicken breasts in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter over stuffing mix.

      Cook on low 8 to 10 hours or high 4 to 6 hours.Serves 6.

      Crock Pot Taco Meat

      Ingredients:
      • 1 lb lean ground beef
      • 1 (3 3/4 ounce) packet taco seasoning
      • 2/3 cup water
      • 1 cup salsa
      Directions:
      1. Brown and drain ground beef in frying pan.
      2. Add 2/3 cup of water and taco seasoning.
      3. Mix and simmer for a few minutes.
      4. Place meat mix in Crock Pot.
      5. Add 1 cup of Salsa and mix thouroughly.
      6. Cook on low at least 4 hours. Can be left on low all day.

      Taco Crescent Casserole

      1lb ground beef
      1 pkg of taco seasoning
      1 can Rotel
      1 bag of shredded co/jack cheese (16 oz)
      2 cans of crescent rolls

      Preheat oven to 350.  Brown ground meat.  Drain and season to taste.  Stir in Rotel and cheese (save a few pinches for the topping).

      Line casserole dish with one can of crescents.  Pour in meat mixture.  Top with second can of crescents.  Sprinkle cheese on top.  Bake 15-17 minutes, or until crescents are golden.

      Boneless Sirloin Steaks

      Use boneless sirlon steaks, cut up into small strips, season with Tony's, and line the bottom of the crock pot. Then cut up fresh broccoli and cover the steaks. Finally, mix 1-2 packets of brown gravy mix (Depending on how much food you have; I have a large crockpot and use 4-6 heads of broccoli to cover the meat, so I use 2 packets). I usually cook on high and it is done in 3 hrs. So I would say cook on low for 5- 6 hours. I serve the broccoli and beef over white rice and we love it.

      Beef Roast

      Begin with a 2-3 lb. beef roast. Stuff slivers of garlic and fresh jalapeƱo in holes you make with a knife. Season well. Put in crock pot. Cover with chicken stock. Mince or crush several more cloves of garlic into the broth. Cook until it falls apart. Serve with rice. Best roast ever!

      P. S. Don't touch your eyes or your nose after slicing the pepper!!

      John's Chowder

      A co-worker, Michelle, shared this recipe with me a few years ago, and it immediately became a New Year's Day tradition at our house.  It is so easy and soo delicious!

      First, you'll need a pound or so of sausage (just depends on how meaty you prefer your meal), a green bell pepper, half an onion, and a stalk of celery.
      Chop everything and throw it into a crock pot.


      Then, add three cans of black-eyed peas, a can of Rotel, and a can of beef broth.  Season to taste ( I use salt, pepper, and garlic powder).


      Stir everything together, cover, and cook on low for about six hours.


      After about six hours, throw in two bags of boil-in-bag rice (without the bag), turn your crock pot up to high, and cook for about 30 minutes.


      You're done!  Yep--It's that easy!  This is great cold-weather comfort food.  We love ours with cornbread muffins.

      Chunky Monkey Pancakes


      Ingredients
      • 1 cup all-purpose flour
      • 2 teaspoons baking powder
      • 1 teaspoon baking soda
      • 1/4 teaspoon salt
      • 3/4 cup milk
      • 3 tablespoons butter, melted
      • 2 eggs
      • 1 tablespoon white sugar
      • 1 teaspoon vanilla extract
      • 1 large banana, diced
      • 1/2 cup miniature semisweet chocolate chips
      • 1/4 cup chopped pecans (optional)
      • cooking spray


      Directions
      1. Combine flour, baking powder, baking soda, and salt in a large bowl. Set bowl aside. In a separate bowl, whisk together the milk, melted butter, eggs, sugar, and vanilla. Make a well in the center of the dry ingredients and stir in the wet ingredients, being careful not to over mix the batter. Gently fold in the banana, chocolate chips, and nuts.
      2. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

      *Tip* Get your toddler involved
      Measure out your ingredients and let her dump them in the bowl.  She will think she is a big help!
